Not just for swashbuckling pirates, rum is now one of the most popular spirits on the cocktail ingredient scene providing us with such firm favourites as Mojito’s, Mai Tai’s, Pina Colada’s and everyone’s favourite, the oh so versatile Daiquiri!
It’s easy to see why Rum is so widely adored, with it’s rich history and smooth sweet flavour profile.
Rum is made from sugar cane by-products, then fermented and distilled. The distilled liquid is then aged in oak barrels. As far as distillation goes, it was sugar plantation slaves in the Caribbean who discovered that sugarcane molasses could be fermented and then distilled for a pleasant tasting drink!
Although some claim it originated in Brazil, the Caribbean is undoubtedly the epicentre of all rum production in the world. Virtually every island here produces its own distinct rum style. More than 80% of the world’s total output comes from here. Yeah Mon! But almost every other country also produces their own rum.

MOJITO
Highball Glass
- 30ml Bacardi Rum
- 20ml Sugar syrup
- 1 Lime cut into wedges
- 8 mint leaves
- Soda water
In a highball glass muddle lime, mint, sugar syrup and Bacardi Rum. Add ice then top with soda water.
